Could one of the admins enable the edit own post option in the resources forum? I'd like to update my first post for my welcome panel mod but am unable to do so.

Such an option does not exist. Per a global setting, you are only able to edit your posts upto 5 minutes after posting, and not if a reply has been posted.

You could send us the updated post and we will update it accordingly.

I'll do that when I have more screenshots to show. And I'm also going to plan on integrating this feature in a new MOD. What I want to add to the forum permission controls are things like enable the topic starter to moderate his topic (and replies from others) to a certain extend, also I'm going to try to add the editing feature without time limit because I think this is an essential feature even for a forum like this.

You can disable the time limit, but it's enabled by default.
